Breakfast Custard:

Ingredients: 2 large eggs, 4 Tbsp Splenda, ¼ tsp salt, 1 tsp vanilla, 6 fl oz. heavy whipping cream, ½ cup water, and 1 Tbsp cinnamon

 

Method: Preheat oven to 350 degrees F. Mix egg, splenda and salt thoroughly. Add cream, water, and vanilla and stir until mix. Put into 6-ounce custard cups. Sprinkle with cinnamon. Place cups in 13 by 9 inch baking pan; fill pan with hot water to 1-inch depth. Bake for 35 to 40 minutes or until knife inserted near center comes out clean. Remove cups to wire rack to cool completely. Refrigerate until ready to serve.

Bacon, Cheese, Tomato:

Ingredients: 3 slices of nitrite free, bacon cheese slice, and sliced tomato

Method: Cook Bacon, arrange on tomato slices, top with cheese and then broil until cheese browns.

Meat recipes:

Broiled Lamb Chops:

Ingredients: 8 lamb chops, pepper, 2 tsp basil leaves, 2 tsp marjoram leaves, 2 tsp thyme leaves

Method: Sprinkle chops lightly with pepper. Mix herbs and rub into chops. Put together, wrap and chill at least for one hour. Broil 10 minutes for medium rare, 15 for medium.

Spaghetti and meatballs:

Ingredients: 1 spaghetti squash, 1 lbsp ground lamb or veal, dash of paprika, olive oil, salt, pepper, ¼ cup Atkins bake mix, ½ cup sour cream

Method: Boil up the squash until done. Cut in Half and put to the side. Take the meat and mix the salt, pepper, paprika, and bake mix together. Roll into balls. Cook them until brown in a pan on all sides. Add the sour cream and cook for about 2 more minutes. Take the squash out of the gourd and add the veal.

Bread and Muffin recipes:

Cheese Bread:

Ingredients: 1 cup soy flour, 1 tsp baking powder, ½ tsp salt, 1 and 1/2 cup shredded cheese, 1 slightly beaten egg, ¼ cup heavy whipping cream

Method: Sift dry ingredients. Mix them in cheese and then add egg and cream. Pour mixture over dry ingredients and mix. Rollout dough in 8x8 inch and cut into approximately 1 inch pieces. Place the pieces on an ungreased baking sheet and sprinkle garlic powder on top and add a little bit more cheese for extra taste. If want bake at 350 degrees for about 10 minutes.
